BARBECUE SEASON IS HERE!!!

WHAT'S SHAKIN'??
Yeah, barbecue isn't ever really OUT of season in south Florida, I know...

Grilling is my favorite method of cooking just about everything - meat, seafood, vegetables, soups, chile con carne, even desserts!  I could go on forever about all of it but this month's focus is on grilling meat. Yeah, keep it simple, dumbass...

When it comes to grilling meat (or anything, really) the key to good taste is SEASONING, Salt, any kind of pepper, fruit juice, honey, sugar, beer, wine, and liquor, pickle juice, fresh or dried herbs - it's up to your imagination; I have a few seasonings of my own and a few commercially - produced things that I like to use. I get most of them from vendors at festivals and bike runs, so pay attention when you attend these events.

The FIRST thing I do with meat that I'm gonna grill is coat it with olive oil and whatever seasoning I plan to use, then I let it sit for hours or even days in the fridge - olive oil is an awesome tenderizer.

If I'm using something sweet to grill with, like BADBOY'S FUCKIN' AMAZIN' BARBECUE JAZZ, I  like to use a tangy seasoning - Chachere's creole is perfect because it adds salt and a nice red - pepper burn under the sweetness. I'm not endorsing any particular product; again, my point is to make YOU think about what YOU like!

Gas, or charcoal?

THAT'S up to YOU; I prefer charcoal myself, for the flavor- you can add your favorite boutique wood chips to the fire for extra flavor...nice, even heat is the key.
